Primal Eating Modern Table

  Lauren     Crystal

With my move to Austin, I’ve been working on breaking into the world of online business. No longer am I limiting myself to work with only those who are physically near me, now is the time of international business success! My new venture is with my friend Crystal Nelson who currently works at Crossfit Central where I will be working. You can check out her blog here.

You all know how passionate I am about food and eating as the source of your greatness. This is my channel to give that gift to the world! Take some time to read the rest of this post and visit our website ( which I spent DAYS… literally…. working on)

Our 8-week online group program begins April 5th. Are you ready to change your life?

Primal Eating Modern Table is the brainchild of Us; Crystal Nelson and Lauren Sheehan. We are both seasoned crossfitters and coaches who have spent the last few years searching for a way of eating that was the best for our own lives as well as our clients’. What we didn’t expect through this transition is that in our efforts to eat the most optimal foods for our fitness performance and general health, we realized the true power of food. Eating for performance isn’t just for athletics. When we eat the most clean, whole, and unprocessed foods our bodies can function at their best; ALL DAY LONG.

Do you have frequent headaches?Bloating? Digestive problems? Congestion? Heart Burn?Anxiety? Low energy?
We found out very quickly that most of these issues could be solved by simply eating the best FOOD we could find. (for a definition of food see here) We also found out that it is NOT normal to have that energy crash around 2pm every day, or to feel bloated after a meal. These are all signs of inflammation from what’s going into your body.

Food isn’t just for fun, and it isn’t just fuel. It’s the key to your ultimate happiness. If you want to really start living your life, bringing your ideas and creativity to the forefront, and create your success you NEED to start to look at the foods you eat and if they are serving you and your goals.

We created Primal Eating Modern Table to help you make this transition with as much support as possible. Between the two of us, we’ve pretty much gone through it all. We’ve figured out what the best resources are, we’ve learned the easiest ways to prepare and cook meals on the go, we’ve experienced going to social events where there is nothing "primal friendly" to eat… as well as the funny looks and interrogation of friends when you tell them you don’t eat dairy or gluten anymore. We’ve experience the change in our minds and performance inside the gym, but just as much outside the gym.

Everything we are going to tell you, teach you, and inspire you with is of our own experience and it’s from the bottom of our hearts. WE KNOW THAT THIS WILL CHANGE YOUR LIFE MORE THAN YOU CAN IMAGINE… and we’re excited to be able to share that journey with you.

Here are some comments from participants:

  • Thanks so much for your workshop! It has gotten me energized and motivated to get myself back on track so that I can continue to help others in my own life and businesses. Plus with our baby steps, take it even further than I was able to do in the past during the times I really took care of myself! I love learning new things about myself, others and getting new tools to re-start me and this time, KEEP me going in the direction I want to go, thank you for helping me on that journey. =) Here is the quote I read so that you can pass it along to everyone.
  • The day was exceptional. You two are an awesome empowering twosome. You compliment each other so well and I believe that you are reaching people who need this and also you are inspiring us all to stretch and grow and bloom. What an awesome spring we are all going to have. We are planting the seeds for all those beautiful flowers to spring forth. Thank you thank you for what you are doing. It is so necessary in this world of CNN (constant negative news) and most people are honestly flying by the seat of their pants. You change one person at a time and pretty soon you have a ripple effect that is out of control!!! Yea, and you did it, you started it.Fort Collins will never be the same.

A Paleo Family Case Study

Too many of us move mindlessly through our meals, without being fully aware of the damage we are doing to our bodies.  In my endless hours of research on auto-immune and chronic disease, I learned that the number one way to reverse the symptoms and the disease itself is through nutrition.

A year ago, someone mentioned to me that they had given up all refined sugar and everything processed.  My thought was, “Oh, poor them…I’m SO glad not to have health issues that necessitate THAT kind of CRAZINESS.” Little did I know that I’d be in their boat a year later.

When my 20 month old son started to show scary proof of a number of food allergies and sensitivities 6 months ago, we began shaking processed food out of our cabinets.  In the last eight years, we had already eliminated all high fructose corn syrup, trans fats and other sinister food additives from our family diet, but now we were eliminating organic, whole grain cereals and snacks we kept stocked in our cabinets.  For the record, his food reactions included but were not limited to:  dairy, soy, gluten, corn, beans and eggs.  This meant we were feeding him a whole food diet already (minus a variety of fruit and veggies also on his ‘no’ list).  Forward four months:  after countless hours of research and meetings with our Naturopathic Doctor, we figured out that part of his issue was that he was getting an assortment of antibodies from me throughout pregnancy and nursing.  I had been experiencing an auto-immune reaction, for about 6 yrs, which we could now clearly link to gluten in my diet.

My 6 yr old daughter was also experiencing some symptoms around gluten and dairy, primarily itchy skin and upset stomachs.  Around the time of this health discovery, I was beginning to return to my fitness quest, after having a baby whose disrupted sleep patterns of only about two hours at a time had tortured us for a year and a half.  I still had about 20 ‘pregnancy’ pounds to lose.  My husband has been a competitive cyclist for years, but also had some serious sugar addictions and issues with ‘hitting the wall’ daily, due to low blood sugar.  We were both seriously addicted to coffee, caffeine and sugar. In case you were wondering, I’m 36 and Gary is 43.

After reading a ton of information on the anti-inflammatory/auto-immune benefits of the Paleo Diet online, and reading both the Paleo Diet Book and the Paleo for Athletes Book, we decided to make some serious changes.  On New Year’s Eve (today is Feb 10th), we packed up all of our processed food from our cabinets, fridge and freezer, and replaced it all with veggies, fruits, nuts and seeds.  We found the local resource for grass fed beef, game meat, free range organic turkey and chicken and packed up our freezer. The hardest change for both of us has been giving up coffee…and our ‘off plan’ snacks twice or three times a week involve either tortilla chips with Paleo approved guacamole and salsa, or popcorn with butter and sea salt.  All in all, we are probably 90% Paleo, with a weekly latte and one of the snacks above.

In the last six weeks, we’ve noticed a ton of benefits to eating ‘Paleo’…before changing our diet, Gary had DAILY heartburn, but after a week realized it had disappeared…I’ve lost about 18 pounds, and Gary’s lost 7, going down 3-4% in his body fat measurement.  Neither of us have had our usual blood sugar crashes, and the days of waking up ‘starving’ have only happened when we’ve gone off plan the night before, which we don’t do often, because the reduced energy we experience is so dramatic.  We’ve both had more peace in the gastro-intestinal world, I have less negative menstrual related symptoms, and we have less cravings than before.  Our daughter is virtually free of food-related issues, and our little guy’s eczema is completely gone.

As some of what we’ve read online, we agree that the plan is socially prohibitive, but we either bring something we can eat, eat before we leave our house, and/or load up on a Paleo ‘allowed’ salad at an event. There’s always salad.  I’ve indulged in a couple of gluten free brownies at a party, but over all, we haven’t wanted to touch sugar, knowing we’d feel run down afterward.  Our daughter complains about all the broccoli and asparagus we’ve been making her eat, but don’t all 6 yr olds need something to complain about?  Her lunches for school are mostly Paleo, as well.  We all eat leftovers for breakfast, with some fruit, and everyone has more steady, sustained energy than when we’d eat other ‘breakfast foods’.  The kids get a few more grains than we do…usually a rice cake here and there.  I won’t make excuses.  It’s just really a challenge some days to feed two active, growing children 5-6 meals of freshly cooked protein, veggies and fruits…oh, yes, I didn’t mention that we stopped using our microwave at the same time we ‘went Paleo’.  It’s doable. It’s like any health related lifestyle change.

If it’s important to you, you make time to do it.  We eat whole foods every meal, cooked the old fashioned way, we have two businesses, two young children, we both workout 5-7 days a week and have a family adventure at least once a week… we make conscious choices about our health, business and relationships.  This choice of nutrition has had numerous positive effects on our family, so the plan and preparation time has been worth it.  Too many of us move mindlessly through our meals, without being fully aware of the damage we are doing to our bodies.  In my endless hours of research on auto-immune and chronic disease, I learned that the number one way to reverse the symptoms and the disease itself is through nutrition.  Food has the power to heal, even if the anti-nutritional harm has been going on for some time…for us, this diet was a large part of healing our bodies from a long-lived thoughtless food spree.

Tiffany and Gary Blackden are going on 8 years of ‘living the dream’ as entrepreneurs.  They haven’t had cable TV for 7 years, never read the paper and have a pact to never buy their children a video game.  They moved their family to Northern Colorado 3 years ago, to escape the chronic stress of living in the sprawling metropolitan DC area and enjoy 300+ days of sunshine a year.

If Your Grandma Can Do Crossfit, so can you

This inspire me monday speaks for itself. I came across this video of a 72 year old women doing FRAN, the mother of all crossfit workouts.

Many people watch videos of a Crossfit WOD and think, "I can never do that… that’s awesome, but I can’t do it. Not for me."

So here is my absolute proof that Crossfit is infinately Scaleable. Watch and be amazed. The link also provides a story from Barbara and how Crossfit has helped her live an independent and fun filled life at 72.

Super Bowl and Clean Eating??? Yes way!

So this idea popped into my head this morning because I’ve really been slacking on my food posts. But I was reminded that the Super Bowl is this Sunday and you all know what that means.. lots of junk food. Now, since I know all of you  have been eating clean since the beginning of the year and have been saving your cheat for this Sunday…. RIGHT??? Anyway, whether or not you decide to delve into feel-not-so-good foods you can still make your party snacks clean and still feel satisfied. Here is my "High Quality Food" Super Bowl line up.. my version of "eat this, not that”

1) Chips and Salsa (of the sweet potato variety)

I found these  at whole foods and I love them! I love to make my own sweet potato chips but this is so much easier! Get a few packs of these instead of regular potato or corn chips. Terra makes other varieties of tuber chips like carrot and sweet potato chips as well as beet and sweet potato chips.

Buy your favorite brand of low processed salsa or make your own. In fact use whatever wholesome dip you choose and these are sure to please everyone!

2) Fat Guacamole Devils

An amazing twist on a classic party food. I have never liked deviled eggs so these were a breath of fresh air. I would probably eat anything with avocados on it.

The recipe for these is on Marks Daily Apple. One of my favorite places for everything primal.

3) Mini Italian Sausage Meatballs with marinara for Dipping

Who loves those mini meatballs that are in the warmed Crockpot in some yummy sauce!? I do! You can find the recipe for these here.

I suggest making them mini size and after they are cooked you can keep them warm in a crockpot filled with sugar free marinara sauce.

4) Grain Free Zucchini Friti

Who doesn’t love stuff that is fried and breaded? Well now it’s worry free because you can use almond meal instead of flour or corn etc. Follow the directions here.

Serve with marinara sauce for dipping.

5) Homemade Chicken Wings

It’s easier than you think to make your own chicken wings. Here is one of my favorite recipes.

Alcohol:
1) Gluten free Beer
2) Red Wine
3) Homemade Margaritas

Mix 1 shot tequila with the juice from one lime and a splash of club soda. Add a bit of agave if you want some sweet.

4) Vodka Soda with lemon

And there you have it! Enjoy!

Make February Better than January!

It’s the first week of February. How are all your resolutions and intentions coming?

This week take some time to make sure you are on the right track. Go over what you wrote down at the beginning of January, or if you didn’t write it, now’s the time to get out some paper and pens and do it. Look at the things that went great and the things that went bad in January and use those to your advantage. Take more stock in your successes than your failure.

Lay out the month of February for yourself and set 1-5 intentions in all categories of your life. I like to use: Career, Fitness, Food, Personal Potential, and Fun.

So here we go for mine:

Career:

  • Stay as present as possible with my current clients
  • Create $2000 in long distance coaching clients to prepare for move
  • Look for other trainers, options, etc for fitness clients before I move
  • Have a FULL class at the Simply Live Workshop Feb 19-20
  • Have a FULL group for the Live your Life 8 week program following Simply live

Fitness and Food:

  • Practice Muscle ups at least once a week
  • 3 workouts a week
  • 80/20 clean eating ( 3 whatever I want meals a week)
  • Be more conscious about vegetable variety

Personal Potential:

  • Continue to read new books
  • Banish my limit on my own self worth
  • Morning Pages at least 4 times a week
  • Yoga once a week

Fun:

  • Plan a game night this month
  • Plan one girls night
  • See 2 movies I want to see
  • Don’t take ANYTHING too seriously

Get the Idea? If you are having a hard time sticking to your intentions or finding time for yourself come to SIMPLY LIVE on Feb. 19-20. Give yourself the gift of time to focus on you and your goals for the year.

3-2-1 GO!

Be Fearless!

What do you fear?

Fear is a powerful feeling. It can stop you in your tracks; it can keep you from your highest potential.

What are you afraid of?

I see a lot of different people and the majority of people I see are operating their lives in fear. But it’s not a fear you would think of. Most of the fear I see in people, and in myself, is fear of getting everything you want; that voice that tells you you don’t deserve the greatest things you desire, the voice that tells you you can’t do certain things; the voice that tells you to stay in your comfort zone. We all have that voice. .

Here is something I want you to burn into your brain: If you want to grow, you must step outside your comfort zone.

So I charge you this week to step outside of your zone. Do something spontaneous. Do something you are afraid to do. Go to that networking thing you’ve been nervous to go to. Tackle that workout that you hate to do. Call an old friend you’ve been meaning to talk to. Quit your job and start your own business.

THE KEY HERE IS TO FOLLOW YOUR HEARTS DESIRE… even if you are afraid. Even if you don’t know what will happen. All you need to do in life is “stay tuned.”

If there is something you have wanted to accomplish but haven’t because of fear, make it a priority now to focus on it. Set an intention around it. Today at Time to Thrive Barb Wade gave us a great exercise to do around fear. In case you were not there, here’s what you can do.

Divide a piece of paper in half with a line. On the left side write “limiting beliefs” at the top, and on the right side right “inner wisdom”, “god’s voice,” “love”, whatever feels good to you. In the left side, write down all the negative self talk that comes to you surrounding your fear of doing your “thing.” In the right side, write down what your inner wisdom would say to you if it heard you telling yourself, for example, “I have to do this because I need to an example for my clients and you are a big hypocrite if you don’t do it perfect all the time.”

My inner wisdom is a lot like the voice of a good friend who always has wise and comforting words. My inner wisdom always speaks the truth. It says in response: “Honey, being human and being open about making mistakes is the BEST example you can be. You don’t HAVE to do anything and especially not for anyone but yourself. You will drain yourself dry if you try to be perfect all the time, you already are perfect…you are exactly enough.”

Try this with your fears. Just writing that makes me feel so light and fluffy. The lessons we learn are endless and infinite; and I guarantee you will get one when you finally tackle that thing you are afraid of doing.

Have a FEARLESS week.

Create your Own Reality

“The decision you make today is often not the choice you make tomorrow.”

Does this sentence resonate with you? That sentence is a direct quote from God via the book Conversations with God, Book 2 in which I am love with by Neale Walsch. I read this and I knew I would be writing about this for this week’s inspire me Monday.

What does this mean exactly? We have all experienced this in one way or another. For me it comes to mind with food choices. Every night I go to bed thinking “Tomorrow will be a perfectly clean day, no faults, no exceptions.” And then tomorrow comes and I go to an event or get a craving or blah blah blah, you know the drill… I eat something I decided I would not eat the day before. Sound like anyone else?

What I read in Conversations with God that made me go YES! Is this: The secret of all masters is to keep choosing the same thing.

It’s that simple people. Just keep choosing the same thing over and over again until it is a part of your reality. Another word for this: practice. So in my case, with food, as I am learning, is that it may take me years to fully manifest the habits I decide upon every night without effort. But the more I keep CHOOSING this reality of effortless food decision making, the better my chances are of creating a reality where I always make the food choices I want to make.

This is the power in choice. When you choose, choose it with all your heart. Go full throttle into it without fear. Keep moving toward it until you’ve accomplished what you want. Don’t take NO for an answer. Whatever you call forth, you will receive. And if all you call forth is “I want to make better decisions” that is exactly what you will get; the experience of wanting. Choose “I WILL make better decisions.”

Lastly, be careful of expectations. You must be open to whatever comes to you.

“If you are not Careful, you will Drown in your Expectations”

Growth requires a step into the unknown. Often we see growth as trouble and standing still as safe. So jump in, keep choosing what you want to manifest, and stay open. Have an Amazing Week!

Primal Hazelnut Butter Chocolate Chip Muffins (AKA Nutella Muffins!)

012 A funny sequence of events happened to me in the past few weeks. The clinic I work at gets a monthly addition of Sunset Magazine and every month I flip through looking for recipes I can modify. In December I saw they had a recipe for Hazelnut Butter Muffins made with Hazelnut flour in them. I was intrigued at hazelnut flour, but hadn’t really tried to find it knowing that the ingredients I would need to make a paleo muffin with hazelnut flour would require expensive ingredients like hazelnut oil.

So I was floored to find a package of hazelnut flour in a holiday package Diego and I received.I felt like this was my calling now, and I had to suck it up and buy the ingredients I needed to experiment with this flour.

What I planned to be Applesauce Hazelnut Butter muffins ended up being Chocolate Chip Hazelnut butter muffins and they turned out delicious!

These muffins have some weirdo ingredients like hazelnut oil and hazelnut butter. I made my own Hazelnut butter, which was super easy. I would suppose that using an oil that is less expensive but lacks a strong flavor like grapeseed oil would work just as well.

You Need:

1 Cup Blanched Almond Flour

1 Cup Hazelnut flour

1 tsp baking soda

1/4 tsp sea salt

1/2 cup Hazelnut butter

3 large eggs

1 cup unsweetened Applesauce ( I like 365 brand, it’s super smooth)

1 tbsp vanilla

3 tbsp agave nectar (can be omitted if you choose)

1/4 cup grape seed oil

2 tsp hazelnut oil

1 cup chocolate chips

Preheat oven to 350.

In a small bowl, mix the dry ingredients well. In a large bowl mix the wet ingredients well. Leave the chocolate chips for later.

Mix the dry ingredients into the wet ingredients and then fold in the chocolate Chips.

Place batter in muffin cup lined muffin pan 3/4 full. Bake for 20-30 minutes or until a toothpick inserted into the center comes out clean.
